How to Make Instant Green Tea: Ratio, Water Temperature, and Why It Never Turns Bitter

To make a perfect cup of instant green tea, stir 1/4 tsp of green tea powder into 8–10 fl oz of hot or cold water. That is the whole method. There is no steeping, no timer and no leaves to strain, because instant tea powder has already been brewed and freeze-dried — you are rehydrating finished tea rather than extracting it.

Why water temperature does not ruin instant green tea

With loose leaf or tea bags, green tea is famously fussy: too hot, and you over-extract the leaf, pulling out the compounds that make a cup harsh and astringent. That is why brewing guides tell you to hold the water below boiling and watch the clock.

Instant green tea powder does not have this problem, because there is no leaf left to over-extract. The extraction already happened before the tea was dried. Boiling water will not make it bitter, and leaving it sitting will not make it stronger or harsher. What changes the cup is the ratio of powder to water, and nothing else.

Iced green tea

What is actually in the cup

Frequently asked questions

Does instant green tea get bitter if it sits too long?

No. Bitterness in brewed green tea comes from continued extraction of the leaf. Once the tea is a dissolved powder there is nothing left to extract, so a cup that sits is simply a cup that has gone cold.

Do you need to strain it?

No. It dissolves completely, which is why it works in a travel bottle or at a desk with nothing but a kettle.

Can I use boiling water?

Yes. Unlike loose leaf green tea, boiling water will not scorch or over-extract instant green tea powder.

Why do I see small white particles in the powder?

In flavored teas those are natural flavor particles mixed in with the tea. They are safe to consume and dissolve when mixed with water. Brands that add artificial ingredients achieve a uniform color; we do not, so some separation between the flavor powder and the tea powder is normal.

How much green tea powder for a mug versus a travel bottle?

Scale by volume: 1/4 tsp per 8–10 fl oz. A 20 oz bottle takes about 1/2 tsp.
