Freeze-drying removes water at low temperature and keeps more of the coffee's aroma, which is why our retail and hotel coffee is freeze-dried 100% Arabica. Spray-drying uses heat, costs less and makes a fine powder, which suits some ingredient applications where solubility or particle size matters more than cup character. We supply both for manufacturing.
