How Is Decaf Coffee Made? EA Process vs. Methylene Chloride
There are four common ways to remove caffeine from coffee, and they are not equivalent. Two use chemical solvents — methylene chloride and ethyl acetate. Two use no solvent at all — the Swiss Water Process and CO2 processing. The four methods
Methylene chloride (MC)
The most common commercial method and the cheapest. Methylene chloride is a synthetic solvent that binds to caffeine and is then evaporated off; it boils at a much lower temperature than roasting, so residue in the final cup is minimal and regulated. It is nonetheless the method people are usually trying to avoid when they ask about chemicals in decaf, and it is rarely disclosed on packaging.
Ethyl acetate (EA)
Ethyl acetate is a compound found naturally in fruit, including bananas and apples. In the natural EA process it is derived from natural sources — in Waka's case using natural acetic acid and natural ethyl alcohol — rather than synthesized petrochemically. It binds to caffeine the same way MC does but comes from a food-derived origin, which is why it is often labeled "naturally decaffeinated" or "sugarcane process."
Swiss Water Process
Solvent-free. Green beans are soaked in water, the caffeine is filtered out through activated carbon, and the flavor-carrying compounds are returned to the beans. It is effective and chemical-free but expensive, and some argue it costs more flavor than solvent methods.
CO2 process
Solvent-free. Pressurized carbon dioxide selectively binds caffeine and is then depressurized to release it. Highly effective and flavor-preserving, but capital-intensive and mostly used at commercial scale.
Which does Waka use?
