What is mocha?
A caffe mocha is a fine-quality cup of coffee with hints and flavors of chocolate infused into the drink. The drink is usually made with espresso, or other coffee base, and hot milk combined with the sweetness and flavorings of chocolate, from a mixture of cocoa powder and sugar.
Chocolate syrups and shavings may also be used in mochas, with both dark and milk chocolate being popular choices in the taste and decoration of a mocha drink.
This recipe takes both of the primary elements of a mocha and bakes them into a perfectly soft and chewy cookie. The bitterness of the coffee and the sweet, rich taste of chocolate combine to give you the perfect pick-me-up throughout your day.
Chocolate Mocha Cookies with Instant Coffee Recipe
INGREDIENTS:
- 1 ½ cup flour
- ½ cup butter
- 1 egg
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- ¾ cup brown sugar
- ½ cup white sugar
- ½ teaspoon baking soda
- ¾ cup cocoa powder
- 2 teaspoons Waka instant coffee
- 1 ½ tablespoons coffee extract
DIRECTIONS:
- Mix together flour, salt, baking soda, and cocoa powder in a large bowl
- Cream together butter and sugars
- Add in egg and vanilla extract to wet ingredients one at a time, beating well after each addition.
- Add in coffee granules and extract to wet ingredients
- Slowly add in dry mixture
- Let rest in fridge for 1 hour
- Preheat oven to 350 F
- Separate dough into balls
- Bake for 9-11 minutes, let cool before consuming
