These delicious keto energy balls contain good healthy fats from the nuts, coconut oil, and dark chocolate. Plus, Waka's instant coffee powder adds a kick of caffeine that will keep you going all day long!
Keto Mocha Energy Balls
Ingredients:
- 1 cup almonds
- 1 ½ cup pecans
- 1 ½ packets (1 ½ tbsp.) Waka Coffee instant coffee powder
- ¾ tsp artificial sweetener (stevia)
- 2 ½ tbsp. coco powder
- 2 tbsp. coconut oil
- 1 cup dark chocolate
Instructions:
- In a food processor, add the nuts, coffee powder, coco powder, and sweetener. Pulse until combined and the nuts are granulated.
- Add in 1 tbsp. of coconut oil and let blend until mixture forms a loose dough.
- Remove mixture from food processor and form into small balls. Once made, let cool in the refrigerator for about 10 minutes.
- In a separate small bowl, melt 1 cup of dark chocolate with 1 tbsp. of coconut oil in the microwave (about 50 seconds).
- Cover chilled balls in chocolate and place on a lined baking sheet. Transfer the sheet to the freezer for about 10 minutes, or until the chocolate has hardened.
- Remove from the freezer, eat, and enjoy! Store in refrigerator.
