How to Make Coffee Caviar

What is Caviar?

Basically, caviar is a particular kind of roe made solely by fish from the Acipenseridae family. This species of fish is known as sturgeons. To make caviar, eggs are harvested from female sturgeons before fertilization. Then it is cured with salt to enhance and preserve the flavor. The end result is the caviar we're familiar with.

A great majority of caviar today comes from sturgeon farms. And because sturgeons are an endangered species, this makes caviar really expensive to harvest. In fact, black caviar is one of the rarest delicacies because the beluga sturgeon fish is the only species that can produce it.

Coffee Caviar Recipe

Now that you know caviar is made from rare and expensive sturgeon eggs, you might be wondering how exactly are we going to make coffee caviar without the caviar? It's simple actually! We're going to be using molecular gastronomy to make the caviar balls. Molecular gastronomy is just a fancy way of saying food science.

Ingredients

  • 1 tbsp of Waka instant coffee
  • 1 cup of water
  • 3 tbsp of sugar
  • 1/2 tsp of agar
  • 1 cup of vegetable oil

Instructions

  1. In a cup mix Waka instant coffee with water
  2. In a pot, add sugar, agar, and the coffee mixture and bring to a boil for 1 minute. 
  3. Remove from heat and set aside for 10 minutes.
  4. Use a syringe, squeeze bottle, or dropper to drop the coffee caviar mixture slowly into a tall container of cold vegetable oil.
  5. Strain out the pearls and rinse them in cold water until no oily residue remains.  
  6. Enjoy!
