What is a Waffle?

A waffle is a type of dish made from leavened batter or dough that is cooked between two iron plates. There are many variations depending on the type of waffle iron and recipe used. Waffles are great for breakfast, lunch, dinner, and as a dessert. Often times, it is topped with fresh fruit, whipped cream, butter, or syrup.

Chocolate Mocha Waffles Recipe

Ingredients: 

Chocolate waffle

  • 1 & 1/2 cups of unsweetened plain almond milk
  • 1 tsp of lemon juice
  • 1/4 cup of melted coconut oil
  • 2 tsp of vanilla extract
  • 1/4 cup of maple syrup
  • 2 tbsp of unsweetened cocoa powder
  • 1 & 1/2 cups of whole wheat flour
  • 1/2 cup of fine rolled oats
  • 1 tbsp of flaxseed meal
  • 1/4 tsp of sea salt
  • 1 tsp of baking powder
  • 2 tbsp of coconut sugar
  • 1 tbsp of Waka instant coffee
  • 1/3 cup of dark chocolate chips, plus more for topping

Maple coffee syrup

  • 1 cup of maple syrup
  • 2 tbsp of instant coffee

Topping 

  • strawberries
  • coffee maple syrup 
  • chocolate chips

Instructions:

  1. In a medium bowl, combine almond milk and lemon juice and let set for 5 minutes to curdle.
  2. Add the coconut oil, vanilla and maple syrup; whisk to combine.
  3. In a separate medium bowl, add the cocoa powder, flour, oats, flaxseed meal, salt, baking powder, sugar and instant coffee. Whisk to combine.
  4. Add the wet ingredients to the dry ingredients. Mix well until incorporated, then fold the dark chocolate chips into the mixture.
  5. Let the batter rest as the waffle iron preheats.
  6. Once the waffle iron is ready, spray with coconut oil (or nonstick cooking spray) and scoop on about a third of the batter.
  7. Cook according to the waffle iron instructions. While the waffle cooks, start on the coffee maple syrup.
  8. Combine maple syrup and instant coffee in a small saucepan over medium-high heat, whisking until the mixture comes to a boil.
  9. Reduce heat to medium-low and let cook for 10 minutes, stirring occasionally.
  10. Top waffles with berries and a generous amount of coffee maple syrup.
